Happy Easter! The day when so many people fall into food comas and eat half their body weight in chocolate. As I was away from my family for Easter this year (damn you final exams) there was a distinct lack of chocolate in my day which I immediately decided to rectify by making my own! This sounds like it should be complicated but in fact it is so simple and requires only 3 readily available ingredients!
It only takes 5 minutes to make these so time is definitely not an excuse here!
Serves: as many as you are willing to share them with!
8 tbsp coconut oil or cacao butter
10 tbsp cacao/cocoa powder
6 tbsp rice malt syrup (or 5-6 tbsp any other liquid sweetener)
Optional fillings: goji berries, banana, chopped nuts, orange
What to do:
- Gently melt the coconut oil in a bowl over a hot water bath
- Add the cacao and rice malt syrup and stir thoroughly
- Add any optional ingredients and stir
- Pour/spoon into moulds and place in the freezer for at least an hour
And that’s it! These are best eaten straight from the fridge or freezer otherwise they melt due to the coconut oil, but you can store these for a few days at least. Trust me, they won’t be around for that long though!
