Depending on where you come from you might call this a pitaya smoothie bowl, which is fine by me! Recently I’ve come across more than my fair share of the most amazing pink dragonfruit, and I’ve been loving the colour it gives my smoothies! The fruit itself doesn’t always have a huge amount of flavour, but it looks great, and is lower in sugar than other tropical fruits such as mango or pineapple.
Just take a look at that colour and tell me you aren’t tempted to just dive in!
1/2 pink dragon fruit
1 medium frozen banana (around 100g)
200g frozen berries (I usually use blueberries)
1 tbsp oats (optional)
1 tbsp dessicated coconut (optional)
What to do:
- Place all the ingredients in a blender and blend until smooth and thick and creamy. If your blender isn’t powerful enough to break through the frozen ingredients add a splash or two of plant milk to get it going
- Pour/spoon into a bowl and top with your favourite ingredients. I like to use raspberries, mango, kiwi, blueberries, and dessicated coconut, or granola works really well too.
